Grown at 2,304 metres in Sidama, dried on raised beds under full sun. Natural process, which is the risky one — it either sings or it sulks. This lot sings.

We ask for it at City Plus and no further — any darker and the fruit turns to jam and the florals vanish. Cupped at the bar before it earned a bag. Measured to the gram, poured without hurry.
